Recipe: Cashew Country Gravy

1/2 cup raw cashews, rinsed

1 cup water

2 tablespoons granulated onion

3 tablespoons arrowroot powder or corn starch

1 1/2 teaspoon salt, or to taste

1-2 cups water

In blender add; 1st five ingredients. Blend on high speed until smooth 3-5 minutes. Pour the liquid from the blender into a medium sauce pan. Add the water 1⁄2 cup at a time. Simmer on medium low heat until desired thickness. Use a whisk, stirring continuously as arrowroot powder or corn starch tends to settle in the bottom of the pan and stick.

Cook's Note...
You can crumble some of the un-sausage into the cooked gravy for sausage gravy! This is great over toast for breakfast or with biscuits.
