Recipe: Macaroni Oh-So-Cheesy

1 pound prepared macaroni pasta, whole wheat or brown rice

2-3 cups prepared cheesy sauce (Below)

1/2 cup Tofutti better than sour cream

1 teaspoon soy or Earth Balance margarine
1 teaspoon salt, optional


Preheat oven to 325° Cook pasta, drain and rinse. Pour into casserole dish and fold in cheesy sauce, Earth Balance margarine, Tofutti sour cream and salt. Bake in oven for 25-30 minutes, serve warm.

Chef's Note...
During the baking process, pasta will absorb additional liquid. Be sure to add enough cheesy sauce or sour cream to compensate, otherwise the dish will be too dry.


Recipe: Cheesy Sauce

1 c. raw cashews rinsed
1 c. pimentos

1/2 c. yeast flakes
2 Tbsp Onion powder
3 Tbsp Arrowroot powder or cornstarch
2 Tbsp Lemon juice
1 Tbsp Salt (optional) minutes.
3-4 cups water

In a blender add all the ingredients except 2 cups of water (you only want enough water to blend all the ingredients). Pour cheesy mixture into a medium sauce pan and add the remaining water. Simmer on medium low heat, with whisk keep stirring until desired thickness.
