Recipe: Spanish Rice

5 c. cooked long grain brown rice
1 28oz can diced tomatoes
2 c. diced red onions
1 c. diced celery

1/2 c. diced green bell peppers
1/2 c. water
4 cloves fresh garlic minced
1 Tbsp Chili powder, pepper
1 Tbsp Olive oil
1 tsp. vege-sal
1 Tbsp Earth balance margarine

In a deep skillet sauté onion, celery, bell pepper, garlic, olive oil and water 3-4 minutes on medium heat. Add chili pepper, vege-sal and tomatoes. Simmer for a few minutes to fuse the flavors. Add rice. Continue to simmer until liquid is absorbed, stirring occasionally. Remove from heat, stir in earth balance and place in serving dish.
